Chocolate Chunky Spice Cookies – Paleo!

These are the perfect fall cookie. They’re chunky, warm and chocolatey. Very good and filling! They go great with a cup of coffee.IMG_4900

Dairy and gluten free

Ingredients:

  • 3 cups almond flour
  • 3 T erythritol*
  • 1/2 T stevia*
  • 1 T cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup dark chocolate chips (85% cocoa or higher)
  • 1 cup chopped nuts (walnuts, almonds, macadamia nuts, etc.)
  • 3 eggs
  • 2 T coconut oil, melted
  • 1 T honey*
  • 1 tsp vanilla extract (no caramel coloring – can be a hidden source of gluten!)

Directions:

  1. Preheat the oven to 350F.
  2. Mix the dry ingredients together: almond flour, erythritol*, stevia*, spices, baking soda and sea salt.
  3. Add the dark chocolate chips and chopped nuts and mix well.
  4. Melt the coconut oil in a glass mixing bowl. Add the eggs, honey* and vanilla extract and mix.
  5. Make a small well in the middle of the dry ingredient mix and pour in the wet ingredients. Mix just until formed.
  6. Spoon the dough onto the prepared baking sheet and roll into balls. Press down with a spatula or spoon to make into cookie shapes.
  7. Bake the cookies for 12-15 minutes, depending on how hot your oven is. You may want to check them at 10 minutes!
  8. Enjoy!

Note:

*Instead of using the erythritol/stevia, you can use 1-2 extra T of honeyimg_4897.jpg
