Almond Flour Banana Bread

This was delicious. Thick and moist – the best banana bread I’ve ever made! Made this one at my in-laws on a snowy and cold day in April! 😦 North Dakota weather is very unpredictable.

Almond Flour Banana Bread

Ingredients

  • 2 1/2 cups almond flour
  • 1 T ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3 eggs
  • 1/4 cup plain whole milk yogurt or sour cream
  • 3 bananas ripe, mashed
  • 1 tsp pure vanilla extract
  • 1/4 cup dark chocolate chips (70% cacao or higher)

Directions

  1. Preheat the oven to 350ºF.
  2. Grease a bread pan with butter/coconut oil.
  3. Mix together the dry ingredients in a large bowl (almond flour, spices, salt and baking soda).
  4. In a medium size bowl, whisk together the eggs. Add in the yogurt or sour cream, mashed bananas, and vanilla. Whisk together until combined.
  5. Stir the wet ingredients into the dry ingredients until combined. Fold in the dark chocolate chips.
  6. Place the batter in a large bread pan and bake for about 60 minutes. Check to see if the center is firm and if the sides of the bread are separated from the pan.
  7. Allow to cool and remove from the pan.
  8. Enjoy with grass fed butter! 🙂

    1. Almond flour is really dense and rich! I use it for pizza crusts, breads, cookies (it makes the best chocolate chip cookies), cobblers – you name it!
