Super Fluffy Coconut Flour Banana Pancakes

Difficulty: Easy

Prep time: 5 min Cook time: 10 min Total time: 15 min

Macros: 500 calories for pancake recipe

Fat-24g/Carbs-12g/Protein-28g/Fiber-11g

Servings: 4-6 pancakes

Ingredients:

  • 4 eggs at ROOM TEMPERATURE (very important for them to be fluffy!)
  • 1/4 cup coconut flour
  • 1/4 tsp sea salt
  • 1/2 banana mashed
  • 2 tsp pure vanilla extract
  • 1 tsp baking soda

Directions:

  1. Mix all the ingredients together in a bowl
  2. Pour palm size dollops of batter into a pan over medium heat and cook with coconut oil or butter for 3-5 minutes. Be careful when flipping.
  3. These pancakes are amazing with some fresh or frozen blueberries added!
  4. Top pancakes with the other 1/2 sliced banana, pure maple syrup or grass fed butter. (or almond butter:))

    WHOA! This is unacceptable. It looks too delicious! Your photography is lovely and this recipe looks like something I really need in my life ASAP. I’ve had coconut flour on hand for a while now, since I normally like to use it in some of my paleo-inspired recipes, and this got me out of my coconut flour rut. I bet this tasted absolutely amazing. Thanks for the inspiration and I look forward to seeing more recipes in the future 🙂 Do these taste eggy at all?

      Thank you so much:) I really appreciate your feedback!! And yes they can so it’s important to add the vanilla extract and maybe a sweetener if it’s still too eggy for you!

        Great idea! Vanilla and cinnamon, in my opinion, really take the flavour of any baked treat/oatmeal/pancakes over the top 🙂
