Homemade Almond Coconut Butter

This is a lot like my homemade Almond Butter recipe but I added unsweetened coconut flakes to add in healthy medium chain triglycerides.

Medium chain triglycerides are digested and absorbed faster in your body than long chain triglycerides. This way your body can use them faster for energy! 

Soaking the almonds is important to decrease the amount of phytic acid in the nuts. These physic acids bind to different nutrients and decrease the ability to absorb  these nutrients in your small intestine! Soaking them also increases the flavor!

Ingredients:

  • 2 cups raw almonds (soaked overnight and dried)
  • 1/3 cup unsweetened coconut flakes (or shreds)
  • 1 tsp vanilla
  • 2 tsp cinnamon

If you want a creamier butter add a few tablespoons of unrefined coconut oil!

Directions:

Add all desired ingredients to a food processor and blend on high for 8-12 minutes until desired consistency is reached. This will depend on the power of your processor. Enjoy with fruit, on almond/coconut flour bread or in a chia/flax seed “oatmeal”!
