Homemade Almond Butter (Paleo, Gluten Free, Sugar Free)

Nut butters are by far my favorite healthy fat! As I was searching for a good homemade Almond Butter recipe for the first time it was difficult to find one that did not call for inflammatory, omega 6-filled oils and that didn’t end up dry! I tried my own recipe today and think it worked for me 😃 the answer is vanilla!

In my comparison (using Sam’s club prices), I’ve found that buying store bought almond butter is actually CHEAPER than making your own. However, buying more expensive almond butter like Justin’s brand is more expensive than making your own! So this may be beneficial for you 🙂

Almond Butter

Serving size: 16 oz

Time: 45 min

Ingredients:

  • 4 cups raw almonds
  • 2 tsp vanilla extract (optional)
  • 1 tsp salt
  • 1 1/2 tsp cinnamon (optional)
  • Other possible options to add: chia and/or flax seed (2-3 T.), cocoa powder (1 T.), honey (1 T.), coconut shreds or flakes (2-3 T.)image1-2

Directions:

  1. Place almonds on a baking sheet (preferably stoneware). Roast at 300 degrees F for 25-30 min. Remove and let cool 5-10 min.
  2. Add almonds to food processor.
  3. Process for 2-3 min and scrape sides (I like to use a wooden spoon instead of a spatula because this can cause slits in your spatula).
  4. Process for 4-6 min more until the mixture begins to clump together. Scrape sides again and add vanilla and salt (cinnamon too if you’d like).
  5. Process until the consistency is what you desire (maybe 5-15 minutes depending on your food processor).
  6. If you would like crunchy almond butter simply add 1\4 cups raw almonds about 1-2 minutes before ending processing. Enjoy!
